Enchiladas Queso Blanco

I have always enjoyed a home cooked meal and love selecting the perfect menu each night to accompany my mood. My husband, used to be a chicken tender and fries kind of guy. He didn’t like anything that wasn’t either from a fast food restaurant or from the frozen foods section of the grocery store. At least he didn’t think he did. Enter enchiladas; creamy, cheesy, restaurant quality and literally on the table in less than an hour. With kids, work schedules, and life in general; you’ll be glad to have this recipe on hand and hopefully never have another excuse for why takeout will be easier.

Start by filling a ramekin with queso blanco {white cheese dip} and place into a 350 degree oven for 10 minutes or until melted. Next, cut 2 boneless skinless chicken breasts into 1 inch pieces. Cook the chicken until it is no longer pink.
Once the chicken is cooked through, using a slotted spoon, remove the chicken from the pan, and place into a food processor. Pulse the chicken pieces until they are shredded. { If you do not have a food processor, this can also be done by repeatedly chopping the cooked pieces with a knife until the desired consistency is achieved.}
Place your now shredded chicken back into the pan and add 2 cups of chicken broth, 1 teaspoon each of salt and pepper, and 2 teaspoons of paprika, simmering the spiced mixture for a couple of minutes.

Add 1/2 cup of milk or heavy cream, 1 cup of sour cream, and 2 tablespoons of both flour and butter. Lastly, mix in 1 cup of mozzarella cheese. The mixture should look as pictured above.

Pan fry six soft corn flour tortillas in oil and set into a large casserole. Fill each one with a spatula full of enchilada filling and fold into a roll. Placing seam side down, arrange the filled tortillas all into the casserole dish and top with the remainder of the filling and half of the melted queso dip. Bake in a 350 degree oven for 25 to 30 minutes.

Voila, a Mexican dish straight from your kitchen. Serve with extra queso and tortilla chips. {If you want to punch up the dish for a date night, add fresh frozen margaritas!!!}  Let me know how you like it!! 🙂
